When you force Austria to Surrender, unless you had declared 'total war' (generally a mistake), you then get the opportunity to sit down with the defeated nation and draw up a treaty. You have to create this treaty, with the first clause being 'Terms of Surrender' for Austria. That gives you a certain number of points with which you can go 'shopping' for provinces, money, units, disarming, alliances, etc.

From the Diplomacy Advisor screen choose the "Make New Treaty" tab at the bottom.  If you have recently defeated a nation in war, then you'll have a certain number of "Victory Points" with which to construct a treaty and impose it on that player as "Terms of Surrender."  Be careful not to include clauses that affect other nations in such a treaty, for if you do this, then those other nations will have the option of declining your treaty proposal.

Thanks for the kind words.  I hope there's not a section in the manual that claims that a defeated nation will lose all occupied territory -- if this is so, then that is an error in the manual.  This happens during "Total War", but not during a regular war.

thanks, I think that you are restricted from changing from at war to total war.. makes sense.. seems that it is ok to crush them and get territories etc at the peace tables.. neat
