AP would be full caliber armor piercing solid shot.
APHE would be full caliber armor piercing shot that has a small bursting charge inside.
Usually AP will penetrate a little better but APHE will damage a little better.
APCR is a high density small caliber core penetrator (usually tungsten) inside a light material full caliber sheath. These had higher velocity and more penetrating power but were more deflected by angled armor. And being smaller often did less damage if penetrating. The Russian APCR was known as arrowhead and was said to be nose heavy and unstable at long range.

Those APHE are defintely the trick against the medium and light soviet tanks. Land one hit and they usually are toast.
I saw the APCR for any heavier tanks I encounter, a hit or two usually knocks out the turret or at least immobilizes them, and then you can run around the hit them from the side or rear with a APHE or AP.

I can't seem to figure out how to tell how MUCH ammo you have. I fired my APCR first time and immediatly got a message saying they ran out. Of course it could all be explained in the manual that I've only just started to read....

I think I saw a post that there is a check every so often to see if the unit runs out of ammo or something like that. More likely that you will run out of the less common shell types for example. I think it was Erik mentioned it.

Yes, AFAIK, the game does "ammo checks" for firing units to see if they run out of ammo, with special (and rare) ammo types being most in danger of running out. So, as ammo is handled somewhat abstractly, there is no ammo counter (like, for instance, in CM).
