quick map downsize tutorial please?

I am sure its dreadfully easy but, I cannot seem to find the introductions on how to for example take the large Suez 56 map and 'cut a piece out' to save as my own map, to create my own scenario on......I have looked in the game manual, section 8...am I missing it?
