Ship Type?

The strength of ship is usually 5.
What type of ship would have the strength of 30?

Transports. Each strength point of a unit requises 1 transport point. This seems to indicate that a full large corps was totally lost at sea (and also 30 transport points).

What do the escorts do?

In this screen shot you yourself provided, it is clear there were no escorts. Only one ship (the unit transported) against 9.

Hum... I realized that maybe you did not mean escort as the other ships in the fleet with the TR, but the support units named "escorts" you can buy for 40 PPs.

If you did ask about the latter, those are only assigned to specific convoys as escort duty against u-boats. IIRC they also can protect against subs doing port supply interdiction.
