Am I firing HE, AP or APCR?

Is there a way I can choose whether a particular unit is firing a HE, AP or APCR round or does the unit automatically fire a particular round based on it's target type?

It's automatic. It will fire HE at infantry and some soft targets, AP at armor and will use up all its APCR at any armor in range, even if the change of hitting is minute.

Example:a AFV might have 2 weapons at it disposal,main gun and coaxial mg.You can choose which weapon to fire by pressing the "C" key and selecting 1 or 2. thus "saving " ammo
As above the computer picks the ammo.

With unlimited ammo does a unit run out of APCR ammo?

Not that I am aware of but I've never played it that way.
