I have two questions.
First, why won't my fighters intercept the bombers? and how do air transports work? I can't figure out how to use them to invade Norway.

Fighters need to be in range to intercept or escort, and they have to have remaining action points and fuel.

If transports are in range, they can be used for air supply and paradrops. Click on the paratroop unit and see if it can fly into enemy territory. There is an icon for air supply in a unit's info box that can be clicked on if sufficient air transports are in range.

Is it possible the unit is too large for it to be air transported? because I see no icon on the unit that allows me to transport it

Air sup (fighters) also need to be in full support mode

Air transports are used to supply a unit at ZERO map supply
OR
Drop a paratrooper if he is at 100+% effectiveness. Dropping is simple.. hover over an enemy hex within 8 hexes. Might be 6 I forgot.
