Good Friday Evening Folks. Kentucky Derby is tomorrow. Today was the Oaks, the three year old fillies ran for the lilies (and I haven't a clue what horse won). All Louisville seems to go nuts. Schools are closed and businesses shut down. While the Derby is an international event (airport is clogged with private jets of the rich & famous), today is the city's day to party at Churchill Downs.

So, what's a guy to do when his boss tells him to go home at noon? After walking the dog one nautical mile around the neighborhood, I settled down and kicked out three turns against the AI on WITP. It's Jan 24th, 1943 and I just upgraded my first Marine squadron to F4U-1 Corsairs...... (this game is great)

Tomorrow the guys (who don't seem interested in the ponies) will come over and run trains on the basement layout.

Hope you all have a great weekend.

Dang, sounds like my kind of weekend! AE and running trains.... life is good. [8D]

End of a bad week [:(] My Uncle had a heart attack and a cardiac arrest on Wednesday, he's still in intensive care but should be moving to a 'normal' ward soon, hopefully without any serious side-effects. Then last night a former colleague and friend died after losing his fight with cancer. [:(]
Very sorry to hear that. This is turning out to be a pretty grim Spring.

My gosh, here it is, Cinco de Mayo. Hmmmm. Huachinango Veracruzano. With a rum drink:

Half a cup of Coco Lopez
Two of them little cans of Pineapple Juice.
Two of them little cans refilled with OJ
Two of them little cans refilled with Apple Jack (totally optional, tends to cut it a bit for the girls)
Two of them little cans of Mount Gay Rum
Blend till frothy
Dust (very lightly) with cinnamon and nutmeg
If you are a real aficionado, a cinnamon stick to swirl it with.

Some coastal Mexicans garnish it with cilantro. But I’m an eye-land kinda guy, so a sprig of Mint. Help celebrate the Mexican/Central/South American Revolutions. It really is their 4th of July, and they fought as hard as we did to make it happen. And this (and a few others) is their Independence Day. Ciao John

Found several cattle ranchers in FL and AL that are free ranging cattle and sheep. One of them is right here on earth, just south of Theodore. No antibiotics, no hormones, no feedlot bacteria, 1/3 the saturated fats and 3 to 4 times the Omega 3 acids of store bought USDA prime. And tastes a lot better to boot. Irvington Cattle Company. They sell cows, half cows and extensively cow-pool. They also have a deal with Moseley’s Meats (and a couple other local markets) that have their own cow-pool for grass fed beef and lamb.

I smell an asado coming.

Seriously, I like Colorado Beefalo. Free range as well, and a lot lower in cholesterol. Something to think on, but The Good Stuff only comes in sides.

A half cow is about 225 lbs, net. Dressed, it’s 75 lbs steaks, 75 lbs roasts, 75 lbs ground. Cow pool is up to 10 people each of which buy at least a 1/10 share and each of which gets 7.5 lbs (or so) of each pile. All-up price is about $6.15/lb. That includes all the good stuff and is frankly 1/3 of what you would pay for the equivalent at even Walmart or Piggly Wiggly.

Cow pool shareholders often (always) negotiate among themselves for specific cuts, so one can often go home with 10-15 lbs of pretty good stuff for a net of $3.50/lb. I’m looking forward to meeting some of my cow-pool members. If they take this degree of care with their ingredients, I’m thinking there’s some recipes and friendship parties in the future.
