Got a wonderful keel redesign job for a guy at PYC over in P'cola. Gotta be there Friday and Saturday for the haul out and to measure all the centers and moments. Back into the Boat Biwi thing. [;)] Took these toads long enough. [:D]

Homemade 'sketty tonight (just the sauce and the meatballs). Found a place that makes fresh pasta. Made enough sauce and meatballs for dinner tonight and two sets of leftovers. Sliced open and rendered four mild Italian sausages into the sauce. Meatballs are 1/3 lamb. Smelling delikioso. Woof!

There's lots of things you can put into spaghetti sauce. Shrimp is tasty. My mom used to put tuna in during lent. That was tasty too. Another thing I love to do is to crack some raw eggs into the sauce about 10-15 minutes before it's ready to be served. Don't stir the sauce though! Before you serve it, scoop out the eggs and serve them separately. They're infused with the sauce and wonderful!

Our new favorite spaghetti sauce is olive oil infused with some garlic, then add some cherry tomatos or cut up San Marino's, add in al dente spaghetti and more olive oil plus a dab of pasta water. Then let the spaghetti finish cooking in there. Add fresh herbs at the end, or dry at the beginning if you don't have fresh. Some shaved Peccorino or Romano at the table. Primo!
