Well, easy day at work, time seemed to fly by.(oh how I wish every day was like this)
We are in our typical 100+ weather days with low humidities that will stretch most likely through August.

Cubbies take on the Brewers in a 4 game series for first place, this should be a good week, I hope.[:)]
Looks like my WitP time will be taken up by baseball again.

I went to the Dragon Boat festival this weekend. Lots of fun and the weather was warmish but bearable at 93 degrees and sunny. And if the temperature wasn't hot enough...the hula dancers pegged the thermometer. [;)]
I lost track of baseball, along with almost everything else. I suppose my Astros are cellar dwellers again this year. [8|]

I made some of my famous fall-off-the bone BBQ ribs Saturday for my Mom's Birthday. Started cooking them at 8 am and took em off around 4.[8D]
She had freinds and neighbors over for swimming and plenty of food.
It was 105 and bearable because she has a HUGE inground swimming pool.
Let's just say there were not any hula dancers but there were some pretty ladies there.[:)]
I'm working on setting time aside to take Bob out for some dinner one of these weekends.
Now if only I get him to pay and not seem like such a cheapo.[:'(]<I'm kidding>[;)]

I bake on the sauce(rudy's famous sause, yes they spell it sause here[;)]) and it doesn't overpower the dish but I do smoke it heavily with good old fashioned hickory.ORIGINAL: niceguy2005

I never sauce my ribs. Always just a dry rub and a steady, 4-6 hour smoke over hickory. I don't like the falling off the bone texture. They need a bit of bite to them to be perfect. YMMV.

I never sauce my ribs. Always just a dry rub and a steady, 4-6 hour smoke over hickory. I don't like the falling off the bone texture. They need a bit of bite to them to be perfect. YMMV.
Falling off the bone with juicy flavor is garnered by saucing them mid-term. It seals them to some respect.
Also, I never turn them over, always cook them with the meaty part on top ALWAYS.
Use indirect fire method and I use a tin-foil(pie tin) or other expendable aluminum container filled with water directly underneath the food to keep it moist.
Also, by using water you can keep an eye on your temps, if it boils, lower your temps.
Rule of thumb for juicy , fall off the bone ribs is to never exceed 180-190 degrees at any time during the cooking.
Slowly smoke them with hickory, mesquite, apple or cherry wood, whatever you like. Just don't add too much charcoal/wood and blow the top off the grill with high temps. That will always turn your food into a dry, unappetizing meal.
