Master of Magic
Colonization
Panzer General II
Disciples II
and many more besides.
You and I have almost the same taste tell me about Disciples II? What makes it better than HOMM II or III?
I would have mentioned Heroes of Might & Magic II and III if they hadn't slipped my mind. That's why I added "and many more besides." Disciples II isn't better than the HoMM games. Both series have a style of their own and I enjoyed playing each of them.
To be honest, it's Brother Against Brother, the upcoming title from Western Civilization Software. Not just because I'm a beta tester for it, but because it's a lot of fun. If you have any interest in Civil War tactical combat, or small unit combat in general....I think you guys are really going to like it.
I bought RUS last week, but still haven't played it because I'm having so much fun playing BAB.

Beta Tester - Commander: The Great War
Beta Tester - Desert War 1940-42

So how is the AI in BaB? Does it goto regiment level? Can you break regiments up into companies? Platoons? Squads? I'd love to see a game where it had break downs like that in a tactical nature.
BTW would someone be kind enough to list the chain of formations from squad up to Army? I always get mixed up somewhere between brigades, regiments and battallions. They don't even have brigades anymore in modern day armies do they?
X3:Universe of games rules them all!! Xtra coming soon X3:REBIRTH 4th qtr 2011 YAY!
Not sure this is what the OP intended but, to me the question of "going back to" implies that (a) you play it intensively, to the point that you get sick of it just from playing it too much (not because of a flaw in the game); then (b) you go back and replay it again; and (c) B might recur multiple times. As an exception to this "go back to" pattern, I would point out two games that are "never go back" games to me: Call of Juarez 2; Gothic 2 (or was it 3?). Both superficially good games with real promise, but not only did I not get in to them for various reasons, and never "finish" them, but I have no desire to ever fire up the game again; if I could lose the ability to ever play them again, and get even $5 I would happily do so.
The ones I have "gone back to" the most times over the years (not that I necesarily have gone back to them lately, nor that I will go back again [even a good thing can be done too much]):
Sid Meier's Pirates! (must have binged on that one till I puked at least half-dozen times during a seven or eight year span, I "won" at least 3 times [meaning entire Caribbean taken over])
Hired Guns: The Jagged Edge (have gone back to it twice now and have yet to beat it; maybe third try is a charm?)
Crown of Glory Emperor's Edition (have gone back to it at least 3 times, and yet to "beat it" [in this case that would mean something like conquer all other Great Powers])
Civilization 3 Conquests (probably more hours of my life spent on this game than all others combined. SOO many mods, so well balanced, such a nice compromise between graphics and game play. Will probably never play it again, but I definitely got my money's worth)
Oblivion. Only bought it this summer, and played it exclusively, for literally hundreds or hours. To the point where I lost interest. But I'm sure I will go back. I've only begun to scratch the surface on mods with that one.
Railroad Tycoon 3 (might've been 2, anyway, the last one in the series; revisited it many, many times. Might even reinstall it one of these days . . .)
ADDIT: couple others I forgot:
Mount&Blade Warband
Microsoft Flight Simulator X Deluxe
Fallout3
I'm with Anthropoid. I cna't say that I keep going back to WITP:AE because I have never stopped playing it (except during vacations, and I usually manage at least one turn during that time).

US Army:
Squad
Platoon (3-4 squads)
Company (3-4 platoons)
Battalion (4 Companies)
Brigade (4-5 Battalions)
Division (3-4 Brigades)
Corps (2+ Divisions)
Army (2+ Corps)
The US Army does not make heavy use of regiments except in name only. We use brigades. Regiments would fall above Battalions and below regiments. They would have 1-3 battalions in them. These are modern uses.
Civil war era, think smaller. Company was the smallest real unit IIRC and number about 60 men. Then the next jump was regiment which was smaller than a modern battalion. Civil War divisions only numbered about 5,000 troops where as modern are 20,000+.

Medieval 2
Oh wow, when you say Medieval 2 you are refering to Jeff lapkooff's game correct (and not MTW 2?)
I thought i was the only one that still fired up that cool little game.
Here's one I don't think has been mentioned yet, Starfleet Command 2: Orion Pirates. I've gone back to it about 4 or 5 times over the last decade and I find I play it for maybe about 50 hours each time. Superb game, great depth and wonderful (if hard to install) mods.
Combat Missions 1, 2 and 3 and the Take Command titles. I suspect this will be true of Battlefield Academy in a few years, plus possibly Theatre of War, Crown of Glory and Forge of Freedom.
I can pick up almost any game in my collection and play it now and again, however, my favorites are:
Command & Conquer: The First Decade (compilation pack)
Dawn of War: Platinum Addition (compilation pack)
Codename: Panzers I
Codename: Panzers II
Civilization III Complete
Commander: Europe at War
