You don't get new techs outright. For any components the ship has, that you haven't researched yet, you get a % increase in the tech progress. The amount of tech progress you get is random.

I suggest keeping new ships acquired through exploration though (especially capital ships), they can make a massive difference in fights against opponents with equal tech level as you. However, to avoid clanky behaviour, it's also a good idea to keep such ships in fleets with other ships that have the same warp engine component. That way, you avoid ships jumping ahead of the rest of the fleet, or other less advanced ships running out of fuel while trying to stick together with the more advanced ships.
