I've been playing the game and have driven the Peimont army all over the map--what causes them to surrender?

What options and settings are most historically accurate, especially with the captain/general option? The captain does not seem to reflect the French moral but the general option seems to give the AI too much advantage if one is playing either side. Thanks

I am trying to get the setting to the most realistic/historically accurate ones. The confusing one to me is the captain/general settings. Captain does not seem to give the French moral enough credit, but General seems to give the AI too many advantages. Any recommendations?
