Scouting

Is there scouting in this game? I realize that with air recon, you can scout but is there anything set up by calvary? Or by ground scouting?

Also, does calvary get any type of double movement or moving quicker than regualr land infantry?

Cavalry doesen't move any faster than infantry (1 hex per turn), but it does have the ability to move into an enemy occupied or owned hex if ti starts stacked with its own infantry.  Apart from that it is pretty much useless.
 
You can usually see that there's enemy in an adjacent hex (but not always), and how many units there are.  Air recce can then show you what the units are.  You can also air recce an aparently empty hex if you suspect there's enemy there and it will tell you.

Yeah, I don't think many people will spend Replacements on keeping their Cavalry Corps at full strength. Can we demobilize them if we want and get the soldiers placed into our Replacement Pool? I guess they may have a bit more use in the East, but I imagine breakthroughs, even on the vast steppe, will provide next to no opportunities for exploitation with Cavalry. Maybe in the Middle East they will find some fleeting glory.

What is the distance covered by a hex? Seems that a unit facing no oposition could cover at least several in a phase.

I'm not sure what the scale it - IIRC it's 3 or 4 hexes from the Belgian border to Paris, so you can cover that in one phase, but it's also 2-3 hexes across Belgium.  Certainly the Germans can capture Paris in 1914 if they're lucky. 
 
The 3 Galician cities/fortresses of Krakow, Lemberg & Premsyl are each 2 hexes away from the Russian frontier.
 
Cavalry can be useful for putting slow steady pressure on where there's not much oposition and you don't want to spend vast amountes of resources.

As TE I have also managed to use cavalry to exploit gaps in enemy lines on the Western Front when the war becomes mobile again. I never disband my cavalry...
 
As CP I find the cavalry most useful at the start of the war on the Western Front - especially if the Brits are slow in crossing the channel. Then they are sent to the Ost front to help out there.
