Break turning.

How effective of a tactic is break turning? Depending on how advanced a missile is, a break turn may or may not cause the missile to be unable to pull enough gees to hit the target. How about the missiles in Starshatter? Does break turning ever work, or are countermeasures the only way of avoiding a missle?

It's extremely difficult to break away from a missile lock.  Even if the missile fails to hit you directly, there stands a good chance that the missile will explode due to proximity once it detects a miss.

There's also the fact that missiles will automatically reacquire on you and not your decoy if you engage your afterburner/augmenter, which makes turning and burning that much more difficult.
