Changing stance, and audibles

It says in the manual that you can change the stance of players on the defensive side of the ball in the play editor, but I can't see how that's done. There doesn't seem to be any options in the play editor to change a defensive player's stance.

Also, can audibles be called in coaching mode?

I believe the ability to change the stance for defenders is no longer in the new builds.  I am unsure why, but it does not affect game play nevertheless.
