Dont understand first question.

2nd,yes.I do believe it's called a LVCP but I think it's a rocket,not a mortar.Check the US and USMC OOBs

Edit:No,it's a LCI or LCT.It's armed with a rocket for the US Army.

You use it to transport troops,but it can be fired by using the bombardment menu.Go to a unit that can call arty,and it should appear in the bombardment menu (To test,make a random assault battle and pick the unit.Pick US Army,then set date to 1944.The LCI is found in ''misc'' when buying units.

Well,what do you mean?Yes,you can always change the weapons when making a scenario.Is that what you mean?

As Alby said, any unit can report to any 0 unit.
Very useful for an ATG with a squad for instance.

You can reassign individual units, but not the "formation" itself; you will have a large "platoon" with all the engineer and mortar units in it, not a "mixed company" of different platoons. This is only possible by editing the OOB and creating a new company formation with the desired subformations.

Or during the purchase phase during battle setup, you can click on a platoon or section in the list of purchased units.  When you click, the platoon or section will disappear, then... the very next platoon/section you purchase will replace that one and be in the command structure of the company.  You could use this technique to create custom companies.

I'm not sure if this is correct.  Actually I think it is incorrect.  From what I can tell, the computer creates command linkages at the instant of purchase.  And if the link is broken (for example, deleting a formation from a company and then repurchasing a different to fill that formation slot), it cannot be re-established.
 
This is easy to test.  Buy a company, delete a formation and purchase a new formation to fill that slot.  Then set up a small scenario where the company commander is required to rally the new formation.  I'm pretty sure that the company commander will not help out that new formation (thus verifying that the command link was broken when the original formation was deleted).
 
As far as I know, the only way to preserve command linkages is through creative application of the "Assign to New Formation HQ" function.  This gets extremely complicated in a hurry, so I'm not going to post a lengthy dissertation on how to do this.  All I will say is that I've been doing it for years and I still screw things up every now and then.

#1 ammo cannisters are available already to purchase, if you are using Enhanced

Engineers can lay and remove mines, any unit with a satchel charge can blow up at least, wooded bridges by direct firing on the bridge using the charge

Bunkers have different armor ratings, generally the rear is weakest spot and is blown easiest from there, also they can not shoot at you if you are behind it.
