Does a mean exists to have a rough estimate of the force of a region without cavs? Do I have to bring some sea horses to see if there are 0 or a 30.000 Men corps at New Orleans for example? (ok, I'm using an extreme example, but you get the idea [:D] )

I think that's what it means, there being no other alternative except moving troops into the area and seeing what happens. The combat resolution screen has an absolutely 100% correct list of what units were committed; you don't need mounted/cavalry to see it.
