I noticed in the video when anything was clicked on (during the game) there was a nice quaint clicking noise. This had never been in any of the other DB or BF games and as small as it was, it sounded cool. So, why did it not make it into the game? And can it be added?

I think the screen grab software that generated the movie, has the option to add a sound to the mouse clicks of the game.

In game, I think it would be fun for all of 4 minutes before you'd be looking for the sound off button, personally :-)
