You can do this but what affect does it have on the troops? In defence, attack and speed of the march.

From Page 185 of the manual best I know:

Move – The unit is in optimal formation for cross-country movement – with some reduction of combat value.
Combat – The unit is in optimal formation for fighting – but has its movement reduced because the unit is moving tactically anticipating a battle.

movement VERY reduced in combat mode. I have seen other posts indicating that if you enter an enemy occupied hex in 'move' mode you default into a shock attack(this might not be good......)

No that is not what happens.

Not true. Only if you enter in an hex with river you will have a shock attack, not always.

I enter enemy hexes all the time in move mode. No shock attack.

The exception is when there is a river crossing involved, then some/all of the units will shock attack.
