My strategy is to target the biggest high value targets that are within range of the escorts for complete coverage all the way to the target. I also try to slip in some secondary missions right behind the main bomber force to attack nearby factories--typhoons can come in at 10k and hammer a small factory easily and since the ai is focused on the bomber force at 28k they can get in without too much damage.
 
I try to stay away from the Ruhr early but there are two large high value factories there that cry out to be flattened--the krupp steel mill and a synfuel factory. Beware of the flak though.

Good plans. The flak will get worse so balance that in there.

Also, don't forget the RR yards in the Ruhr. Shutting them down will shut down adjacent industries. There are three important ones that choke traffic in and out... a hint, Hamm is one.
