The Germans do have a very difficult time taking on T-34 and KV tanks in the early part of the war. My suggestion would be to focus on taking out the enemy infantry, keep your infantry under cover, and try to sneak around to capture victory locations while avoiding a confrontation with T-34s. Alternately, once you defeat the enemy infantry, you could try to set ambushes to destroy the enemy tanks using infantry close assault, but this is dangerous and unreliable, to say the least.

You could also try scouring your available support units for a gun big enough to tackle the Soviet tanks, but what is available there will depend on your individual game difficulty settings.

much as the Germans did in '41-'42

As Adolf vainly ordered
"The troops must be compelled by the personal influences of their commanders, commanding officers, and officers, to resist fanatically on their present positions, without regard to enemy breakthroughs on the flanks and in the rear. Only by leading their troops in this way can the necessary time be gained for movement of reinforcements from the homeland and the West which I have ordered to be carried out."

Pz IIIs can take out even the heaviest Soviet armour at close range, the art is getting there unscathed and remaining in that state while you pepper them with piddly little rounds

AT guns especially the 88s Flak at long range or 50 mm at closer range taking flank shots do the job.

Flamethrowers are your friend

Push comes to shove and you want to take ground by loosing men infantry can at least damage Soviet tanks, if they're imoblised fight for ground and seek to capture them when the turn finishes

50 mm at closer range

I seem to remember the 50 mm PAK being surprisingly effective, and the crew could shunt it around at low speed.
