Hi all,

Anyone heard from Des in the last 4 days? I'd last heard from him on 2/10...

I assume he's still at the hospital...

Wasn't he at home Kristian?

No. CB and I got an email on the 10th, saying that his docs had called him in because they saw some test results they didn't like. He said he felt fine, and didn't expect it to take long.

Guess he was wrong.

Yeah. Pretty impressive. Very glad that people weren't seriously injured.

There's some discussion on the General Forum about Russians shooting down some UFOs. I think perhaps they need to reinforce the tin foil on their hats. [8|]

Oh, it's (airquotes) "laser beams" now, is it? The tin foil hat brigade is suggesting that it was a ready squadron of 4x fighter jets that were scrambled for intercept and shot it down. There's just so many implausible aspects of that, I don't even know where to start.

I'm waiting for a link to this news article from a reputable source.

By the way, the crater purported to be from the impact is bogus. It's b-roll footage of Derweze.

He's probably busy looking after Madame Gladiatt. She was taken quite seriously ill at one point and needed a lot of care. Hopefully he'll find time to come back one day with the news that she's doing better.

I am jealous for fresh seafood. I fish every waking hour... so that is a fresh as I get..
It is the roux, my friend. That's what makes a decent gumbo. I've made this with Winn Dixie leftover, cheapness, seafood, and it tastes damn near as good.

The cooks out there are likely to go 'well duuuh!' but I should do some roux stuff. I use a 12 inch cast iron skillet. I want the flour and base to be very thin in the skillet and a wide and shallow one works best. Heat is applied to the entire mess evenly and it scrapes and stirs to a beautiful Mahonagy brown all at the same time. If the utensil was deep and shallow, the top portions would be trying to 'cook' and wouldn't be roasting up nicely.

That's one of my "secrets" that aren't really secret. Do the roux is a wide shallow and not a deep narrow. I prefer cast iron because of the heat transfer and retention, but any decent cookware does the deed.

Next; my thoughts on congestive snot as a food: Oh, so sorry, on okra and its alternatives.[8D]

Yeah, but it's so much easier to be an idiot, and not let yourself be encumbered by facts.

Ok, I'm kinda typing this as I'm cooking, so hope it's working for you.

I use a shallow/wide pan for the roux. I use the halfway marks for stove heat. I have Pink Floyd on the headset and spend 15-20 minutes stirring and scraping the roux till it looks the color of well treated oak. Then I move it to an empty burner and let it embroglio (another reason I use cast iron) till it's a deep mahogany. No muss, no fuss, no crusty crap to wash from the pan, and no burnt stuff to hurt the final gumbo. Da roux is da true.
