Ok, I'm kinda typing this as I'm cooking, so hope it's working for you.

I use a shallow/wide pan for the roux. I use the halfway marks for stove heat. I have Pink Floyd on the headset and spend 15-20 minutes stirring and scraping the roux till it looks the color of well treated oak. Then I move it to an empty burner and let it embroglio (another reason I use cast iron) till it's a deep mahogany. No muss, no fuss, no crusty crap to wash from the pan, and no burnt stuff to hurt the final gumbo. Da roux is da true.
Ok, I was doing Floyd, but it was a skoosh to heavy for what I was doing, so went with David Grissman/Jerry Garcia's Old and in the Way.

On his white horse, mescalito;
He comes riding into town;
Bet your woman's up in bed;
With 'ol Panama Red.

Panama Red, yeah Panama Red;
He'll steal your woman, then he'll rob your head;
Oh Panama Red ...

And tons of other gems. Some of the finest guitar work Jerry Garcia has ever done. If you can find it on DVD this one of the finest bluegrass music collections ever made.

I still have it on vinyl, and I'm pretty sure I have it on CD. I agree that it is one of the best bluegrass albums ever released.

"gold will turn to grey and youth will fade away,
they'll never care about you
'cause you're old and in the way..."
fair winds,
Brad

It is sooo windy here this morning.
Life is tough. The sooner you realize that, the easier it will be.

Beginning new job today. Again starting out as part time. However with a blizzard raging outside none of the personel I am to be working with are not in today.

What! No scandals? No juicy gossip? No arguing?
Seems everyone has been behaving.
Odd.

Seems everyone has been behaving.

I've added a few folks to my green button list. It keeps my blood pressure down. PM me if you're interested. I don't get PMs from USS Mike anymore-he's one of them on my list.

Alright, the last sentence was an outright fabrication. [:D]
