Allied production comes from on map factories. Not that you can change them. Not sure if they follow aircraft upgrade psths if you take ALL of a model out of service. Replacements are off map production that are not susceptible to Japanese interference.

By taking a model out of service I mean upgrading every airgroup on map so that no-one is flying it any more. It then disappears from the upgrade menu. I am not sure if having a reinforcement group somewhere in the pipeline (eg the China Command P40E group that turns up in about 1944?) keeps the model in the game.
