I simply can not figure out how to cancel orders that I've already given.

Select the order marker and hit backspace. Note: orders delay usually applies to cancellation too. The order marker is the arrow or defend (etc) white box that appears where you have told the unit to move or attack or defend (etc) to or at. To make it appear select the unit whose order you wish to cancel and you will then see graphics of all the orders it has (and all subordinate units) including the white box that represents the end point for the order you gave. Click on that and hit backspace. Note that the subordinate units will have (if the order has been processed) grey boxes showing their end points and orders and on which you cannot click (you have to select the unit you gave the order to and as its order is cancelled all the subordinate units orders will be cancelled too). Or select the unit and give a new order (the old order will be cancelled). Or - a gamey tip - give a direct fire order to the unit. This will cancel your order without an orders delay - the unit will stop everything and fire where you said - as soon as the fire order replaces the original you can cancel the fire order with backspace!!! Good if you don't mind 'cheating' and really need a unit to absolutely stop what it's doing RIGHT NOW. For example, if it's approaching a crucial prepped crossing without any support, which will likely trigger the enemy to blow the crossing - so you stop the unit by getting it to fire at the enemy instead, then get some mortar fire onto the defenders before proceeding. The mortar usually stops them blowing the crossing.

Another way to instantly cancel an order is to reattach the unit to its parent formation, by clicking on the reattach button in the orders tab.
I don't use this method either, in my games though.
I will almost always await the consequence of the previous order, with a command delay.
There is a rare instance where I might use this, or the fire orders method, and that's if I see the AI choose a route that is totally ridiculous, and would almost never happen for real.
The new order for the better route, is then subjected to an entirely new orders delay anyway, effectively doubling the command delay for the move, so I think this is a valid use of it IMHO.

Delete Orders
To delete an order:
Ħ Select the unit whose order you want to delete

Ħ Press the Delete key or
Ħ Select the order location and press the Delete key repeatedly until the order location and any waypoints have been deleted; or
ƒ¶ Click the Reattach button on the Orders Tab ¡V this deletes the order and places the unit back under command of its Organic Superior ( see Group and Ungroup Units and Organic and Attached Units )
When you have deleted a unit¡¦s orders, the unit will stop moving and will wait for further orders.
If you have the unit icon info box set to display Tasks ( F1 key), the info box will become blank.
Any subordinates of the unit whose orders you have deleted will keep following the tasks they have been assigned by that unit until they receive the message that the order has been deleted.
This effect will not be noticeable unless you have orders delay turned on ¡V see Work with Orders Delay and Orders Delay.
