Each turn you can check the combats that happened in the last turn by hitting the F11 and that will show you all of the ground and air combats that have occurred. Toggle F11 again and it filters to ground only, again and you see the air combats.

What I've been doing, but the numbers don't add up at all.

The turn losses agree with the losses shown in the lower right summary box during the air execution phase (listing sorties, and the various loss types), but when trying the research the exact location of the various combats with the F10 key there seem to be lots of missing combats.

Is it possible the f10 key is only showing the combats of the last day in the 7 day phase?

I'd wish if you could provide more details where it is not adding up. It adds up most of the time, however some AS directive and partial escort reporting can be tricky.
Is it possible the f10 key is only showing the combats of the last day in the 7 day phase?

It should show the whole air phase combats. There could be various filters which can be on, which are hiding some sites.
