Is there anything special about national reserve planes? Will they ever automatically deploy? Do new units get deployed to the National reserve upon arriving in theater?

Nothing too much special. Most of the time they treated as normal air groups.

No.

believe you can access the reserves in the command screen and set them to training; let them fill up with aircraft, swap out etc.

So why have reserves then?

Mainly as a buffer for the arriving units.

So when units are wiped out - the reserves take their place instead? automatically?

I think from what I read above that the national reserve is simply newly arriving units.

Its a better place to put the new squadrons as opposed to some random airfield somewhere in Europe.

Yes, and dumping all of your German air units immediately is not wise as they can chew up a lot of support troops for the air bases.
