Diving aircraft and missiles?

I have to admit, it's a bit puzzling watching missiles and aircraft shed altitude and speed at the same time, especially when the missile is in a terminal dive. I'd have thought that was when the missile should be travelling the fastest. Ditto aircraft diving to escape enemies.
