After I set up a game in Host Challenges, it doesn't show up in Open Challenges.

Hi Hartmann,

Only the challenges you have not set will show up in Host Challenges, your challenges will show in the My Challenges list, but rest assured everyone else will see your challenge in the Open Challenges list.

This was implemented to limit unnecessary clutter and to keep things more organized etc.
