WHEN YOU SET A AIR UNIT FOR INTERDICTION DO YOU PICK THE TARGET AREA?

No, can`t do that. You could limit the air unit range though, if you don't want it to go too far and out of range of your fighters.

That would be cool to concentrate interdiction to an area. But as Meyer1 said you can set the range.

What is the difference between interdiction and an air unit making an attack on an enemy ground unit?

Interdiction happens during the movement phase of the enemy ;) And interdiction also disrupts the enemy's supply net (if enough units are being set to interdiction of course).

Air units have a variety of options available depending on their specific capabilities. Bomber and fighter bomber units have the option of direct bombing strikes against enemy targets. In addition bomber units have the option of interdiction (strikes against enemy units as they move) and combat support (assisting ground units in resolution of attacks) or they can rest. Air combat units have the ability to perform air superiority missions. These units can interdict air missions by enemy bombers.
