Right now it's a binary business: last stand to death pratically or normal retreat.

There could be different levels of 'last stand' order maybe - as it is happening to me that sure, I'd like to hold some specific hexes, but if at the cost of a whole unit til its destruction?

It would do good to have like a 'hold grounds' as long as your Health Points or the like is above that % of your max.

Like, instead of a binary decision system (hold or not), paired up with a binary effect system (re-roll for retreat and take double damage) - there may be a hold up to 75% of HP, hold up to 50% HP, hold up to 25% of HP, normal mode, and retreat if under 25% HP, etc.

In a few occasions I've seen units holding their ground litterally til death.
That means through a dozen of ground attacks and ground strikes.

You can consider some of these hold till destroyed situations as in the last hold they got overrun, couldn't escape, and sent to a Nazi prison camp or gathered and shot right there. Destroyed doesn't mean precisely the unit got wiped out to the last man and the last bullet. It is a general statement of obliteration with few survivors.

I believe some minor country divisions got destroyed on the Russian front from time to time.
