I have succeeded several times against the AI. Secret is to move all your aircraft to bombing range as well as a few good units into Albania ready to start the offensive immediately Paris falls. Quickly move some good German units to Albania via sea. With some good luck with weather, you should push the Greeks back. Bulgaria will throw its lot in for the kill. The Brits may support the Greeks with a unit or 2 but time will beat them. Yugoslavia, and all the Balkans join in the fight against the Soviets. Franco in Spain will usually join in as well. Russia doesn't stand a chance then. No worries about Balkan partisans

This is pretty easy and getting Yugoslavia on-side as well seems OP for Axis.

I used to send one German Mountain division to port and 2 more to attack the line. It is not that easy.

Depends how the Allies respond. It can be easy or very difficult. Greece is much less important than other objectives.

If you have a paratrooper and some Italian Landing Ships, you can take out Greece very quickly.
Drop the paratrooper north of Athens to cut if off from the Greek troops.
Use landing to take port then transport a combat unit in to move to Athens. Biggest you can allocate for the job.
Move in some Italians both from north and through port to support.
With some air power support Athens and Greece should fall the next combat turn.
