Altering unit stats in files

Just got the game and was wondering if there was any way to alter the stats of units in the game files. Such as allowing a 1960's jet to use modern missiles or letting any jet act like it has 3rd generation thrust-vectoring tech.

No.
That's the short answer.
The ability to edit the database is reserved for the Professional version which is an expensive undertaking.
That said you can amend and add various sensors, mounts and magazines and with LUA script add any loadout to an aircraft on a scenario by scenario basis, but it isn't exactly straightforward or persistent.

You can add/remove a few things though like weapons, sensors, datalinks etc. However no building your own hull forms etc.

Devs have reasonable reasons for doing this things. I have added a request for it to the request string to see given passage time if they would consider again.

From the manual Page 271:

"COMMAND offers several tools
to allow users to edit facilities and
naval units in the game. Users can
add weapons mounts to a facility
or naval unit by pressing the “Add
Mount” button in the weapons
dialog."

So you can add or change things on a unit within a limited capability. There are tricks to doing it and being able to use any changes in future scenarios by saving as a template after the changes are made, but its something that takes practice. The database is very large and complex. Aligning, weapons, mounts, sensors, and datalinks is tricky and takes some experience. But that section in the manual is the place to start.
