Rabbit Recipes

Braised Rabbit

Ingredients

1 dressed rabbit (2-1/2 pounds), cut into serving-size pieces
1/4 cup olive oil
1 large onion, halved and thinly sliced
4 garlic cloves, minced
2 cups chicken broth
1-1/2 teaspoons dried thyme
1/4 teaspoon pepper
1 bay leaf
1/4 cup all-purpose flour
1/4 cup lemon juice
5 tablespoons cold water

Directions
1) In a large skillet over medium heat, cook rabbit in oil until lightly browned; remove and keep warm. In the same skillet, saute onion until tender. Add garlic; cook 1 minute longer. Stir in the broth, thyme, pepper and bay leaf.
2) Return rabbit to pan. Bring to a boil. Reduce heat; cover and simmer for 30-45 minutes or until meat is tender and a thermometer reads 160°.
3) Remove rabbit to a serving platter. Discard bay leaf. Combine the flour, lemon juice and water until smooth; stir into pan juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rabbit.

Ingredients

1 large onion, sliced
3 cups white vinegar
3 cups water
1 tablespoon pickling spice
2 teaspoons salt
1/2 teaspoon pepper
2 bay leaves
8 whole cloves
1 rabbit (2-1/2 pound), skinned, cut into serving-size pieces
1/4 cup all-purpose flour
2 to 3 tablespoons butter
1 cup sour cream

Directions
1) In a large nonmetallic bowl, combine onion, vinegar, water and seasonings. Add rabbit pieces; cover and refrigerate for 48 hours, turning occasionally.
2) Remove meat; strain and reserve marinade. Dry meat well; coat lightly with flour. In a large skillet, melt butter; brown meat well. Gradually add 2 to 2-1/2 cups reserved marinade. Cover and bring to a boil. Reduce heat and simmer until tender, about 30 minutes.
3) Remove meat to a warm platter. Add sour cream to pan juices; stir just until heated through. Spoon over rabbit.

A World War II-era Arctic survival booklet issued by the Flight Control Command of the United States Army Air Forces included this emphatic warning: "Because of the importance of fats, under no conditions limit yourself to a meat diet of rabbit just because they happen to be plentiful in the region where you are forced down. A continued diet of rabbit will produce rabbit starvation -- diarrhea will begin in about a week and if the diet is continued DEATH MAY RESULT."

Eventually I hope they (scientists) modify our skin such that we can absorb energy
directly from sunlight, making us solar powered people, freed from the necessity
of killing other beings to support ourselves.

Pasties:

For 46 pasties:

1 quart pork, coarsely ground
1 quart hamburger
16 cups potatoes
12 cups carrots
6 cups onions
salt
pepper

for crust:
8 times the pie crust recipe. (See pie crust recipe below.)

To make meat filling: Mix all ingredients together, season to taste.

Roll out pie dough for salad plate size. Place 1 cup meat mixture on one side. Trace half of crust edge with water and fold over. Take a fork and press edges together. Make two holes in top and put ½ teaspoon of butter in each one. Bake at 350 degrees to 40 minutes and see if the carrots are done.

You could also make this in a regular pie pan with a top crust, then cut and serve.

Make half sized one for young children. [:'(]
Give older boys 3 to 5 pasties for one meal. [X(]

Put on additional butter or a gravy if you want. Make a lot of them and freeze them.

You can also coarsely grind all of the ingredients, then use a smaller plate size such as a saucer, then put a tablespoon or so of the filling in it, then bake. Use as an appetizer.

Pie crust

Pie Crust

For 8 times the pie dough:
16 cups flour, 8 tsp salt
5 1/3 cups lard
2 ½ to 3 ½ cups ice water
4 eggs
4 tsp vinegar
4 tsp baking powder

For 4 times the pie dough:
8 cups flour
4 tsp salt
2 2/3 cups lard
1 ¼ to 1 ¾ cups ice water
2 eggs
2 tsp vinegar
2 tsp baking powder

For 2 times the pie dough: 4 cups flour
2 tsp salt
1 1/3 cups lard
5/8 to 7/8 cups ice water
1 egg
1 tsp vinegar
1 tsp baking powder

To make pie crust: Sift flour and salt together in bowl. Cut lard with pastry blender, two knives or blending fork until pieces are the size of small peas. Add cold water a few drops at a time until particles just hold together. Press together to form a ball. Chill for easier handling.

If there is pie crust left over, you can bake empty pie shells in a pie pan or butter the crust, put either brown sugar or cinnamon sugar on half of it, fold over the other half, seal and then bake it. [:'(]

Definitely eat a variety of foods, even if it takes an effort because the different foods, even just small amounts, can provide essential nutrients.

If one were to cook the rabbit in the skin, the fat just under the skin would then render into the meat.

We actually are solar powered people, we just don't get the energy directly from the sun.
