Construction of fortifications is automatic, yes? There is no order for a unit to start building. Do I have that right?

yes, simply being in a hex will trigger digging in

the game works on the standard military sequence of dig-eat-sleep in that regard

Two types of forts. Ground units fortify, as Loki mentioned. There's also the ability to manually create Fortification units, but pressing Shift-F.
