Pretty sure that's already possible, as long as the weapon has a datalink connection to a suitable platform....?

Easy peasey. Just select the weapon you want to retarget, hit F1 (i.e. the attack button) and select the new target. It will begin heading to the new target provided there is a functioning datalink to support the in flight target update.
