Navy supply effectiveness question

If my fleet is on supply level 1 with the Allies do I need to resupply one way or another if I want my ships to fight on full effectiveness on the turn of Axis?

It seems that it is enough to resupply on "red" with Axis but you need to resupply on "yellow" with Allies.

Also does action in one's own turn with fleets or air make them offline for the next (opponent's) turn or maybe that is only the case for Allies?

Supply is only checked on your turn.
As long as you have 1 supply you are fine for naval combat.

So if I used my interceptors in my turn will they be unable to intercept in the next (opponent's turn) or they just lose effectiveness due to usage?

Just lose effectiveness. Supply for naval units is how long they can stay at sea. It isn't affected by combat.

With air units fighter planes - can they intercept in my turn and in the next opponent turn, or if I used them in my turn they are unavailable in the opponent turn?

Yes. They get 2 intercepts on the enemy turn assuming their effectiveness is above 50% if I remember
