how can you make sure all your troops( Infantry & Armour/artillery) cross a river defended by the enemy rather than just the armour crossing without Infantry support who move faster?

Take the slowest unit in the stack, give it march orders to cross the river, then click on "Set all to this op mode" and on "Set all to follow". As a result, all units in the stack will move at the speed of the slowest unit and all cross together in a coordinated attack. Make sure to switch the "op mode" to "combat" a day's march away from the crossing site, you don't want to cross in "move" mode into prepared defences.
