Disband them in a port that has supplies.

It'll give you aviation support for float/seaplanes.
They won't use land aviation support points then.

Some Japanese AVs can operate aircraft at sea. Can be handy, though they are quite vulnerable to any type of air opposition.

In theory, they are handy to establish a forward air base at a remote Atoll for example. In practice, your opponent will spot and kill that ship pretty quickly if they can.

Use them to bring in some extra air support fast in bases that have decent protection (or the ship will get killed). Or use them on small islands to station some ASW/nav search to protect supply routes.

I use them as baseships for flying boat or fighter squadrons without having to develop the airfield or station aircraft maintenance personnel there. I dump some supply on the island and park the AV to provide the maintenance. If I spot a serious threat, I pull out until it departs.

Very useful to create instant air superiority if there are no land-based or carrier-based opposition.

About the only differences between the different ship classes you've mentioned is the quantity of seaplane support they lend. Allied AVs are generally the largest, with some giving support for 24+ planes. AVP and AVD classes are smaller and may be sufficient for a small recon base or to lend support to out of the way bases. I'll put the AVs in more established (more secure) port environments, whereas I'll put the AVDs or AVPs a little closer to the action.
