I recently started playing again and am looking for a document/link I found very useful in the past. It covered many subjects like escorts, organization of submarines, use of lci's, ect… I believe it was over 100 pages.

Maybe it's the FAQ Inf for Newbs? It has quite a few links in it. You can find it in The War Room 2nd row (permanent link).

The Forum Squeeze is certainly a gem. Some of the information in it is outdated, but it's still immensely useful. While we're at it, here are some additional documents which may be helpful. I think a couple of them come from the Squeeze itself, and others are ones I developed. They do help me play the game, hopefully they'll do the same for you:

Conversions of most of the various gun bore sizes in the game... what it doesn't have you can guesstimate using this as a guide.

As for the colors - in the "Type" column, they're just there is visually break up the types. For the other columns:
Green = some key Allied bore sizes
Yellow = used extensively by both sides
Orange = key Japanese bore sizes
Light blue = just to visually break up all the orange in the naval gun category
