There is no real suitable role for each individual fighter type. Escorts have the best range are likely the best long term tech. Interceptors most numerous for many nations so, free to tech into. Fighter Bombers, just wouldn't pay to tech into.

Most will go down 1 line in technology they have, and primarily invest in the ones they will build if they intend to build more.

Any way to make more flavor?

Considering the shortage of stats at avail to toy with - my only thought was to erase the useless Fighter Bombers and add in Jet Fighters, a tech that is 0 in everything for a while and then gives ample boosts that surpass the other techs.
The decision is about how much to invest in a tech that gives no return at all for an amount of years.

Presently I feel Escort Fighters dominant simply due to the range that is exceptional. By '44 they can operate at 24 range, and can rebase at 48 - giving them such an extraordinary flexibility and to cover fronts at immense distance. I still cannot forget how to try to bomb Soviet ships in the Baltics netted an interception from almost Siberia based fighters...

Another mechanic - but that requires coding - would be that there is a difference in operational range 'on use' (You send in bombers, AND you escort them accordingly) and another is how far planes can factually intercept (React to enemy action).
If Escort Fighters will be denied the possibility to intercept enemy action and be used only in their escort role - that would net a proper difference justifying their supreme range.
