Can anyone explain the difference between symbols and their color.

Are you referring to the coloured circles with numbers inside when you press the "F" key?

That shows the level of the fort with lvl 1 being the lowest and lvl 5 being the highest. The colours represent if it's an Axis or Soviet fort. When a fort it captured by the opposing side it is destroyed rather than captured.
