Technically, you can place ships in a couple places. There are parts of Lake Superior and Lake Michigan that are deep enough the lake bed sits below sea level. Ice is a great excavator. I don't think the Irish have had such a capability for many years. They had a few Hurricanes during WW2 and a few Spitfires after. I guess their Pilatus trainers can be armed with machine guns. :)

Many missions revolve around bombing airfields. Russian aircraft have rough field capability. Su 27 can operate from dirt fields. I suspect the tu 22 blinder can as its engines are mounted higher up. Il 76 and derivatives routinely operate from rough fields. Of western aircraft maybe the jaguar ...

There was no problem leaving Lodz after you took it, as long as a Polish unit did not re-occupy it.

Poland (and any other country) is not conquered until the end of turn process.

To conquer Poland, the Germans have to take both Lodz and Warsaw, since both have printed factories. If either is still Polish, Poland fights on. Also, a country is only conquered during the Conquest step at the the end of the turn. Polish units are not removed until then.
