One thing about allied armour is that they may not be as heavily armoured as German tanks are but they are much faster and more nimble, my advice would be to put maneuverability to full use and keep your tanks on the move and always dodge in and out of cover (behind hills, forests, etc...) in an attempt to quickly flank the german tanks and hit them from the sides and rear.
Didn't have any Jumbos but I did have a few Fireflys and they accounted for several Tigers during the two games.
However, not by using manoeverability but by sitting still, digging in over several turns and then hitting the Tigers at LR. In those situations, they sat there for several turns without shooting until the Tiger was acquired and the hit ratio had increased to a reasonable level. Then they only fired 1 shot. If it killed, great.

If it didn't, they didn't fire a second but let their wingman fire the next shot at the same target. They never seemed to get spotted doing this.
Or, if they didn't have the time to dig in, then sitting on the reverse slope, popping up, shooting and then ducking back.
The next biggest kat-killer was bazooka teams. Either riding up quickly on some type of transport when the Tigers were supressed, or digging in in front of the line of advance and waiting until a kat went past within 2 hexes, then popping up behind the kat.
